Well I went ahead and got Pixelmator. You feel right at home if you are used to Photoshop, almost too much.
Many of the features you want and need are there just like old friends: Levels, Layers, Unsharp mask, layer masks, but many aren't: dodge, burn, cropping to exact sizes, curves.

Breaking news: another contender: Pixel. Adjustment Layers! Looks like a more polished version of Gimp but UI is still not mac native - but close. I could buy all of these and save hundreds over photoshop
OK - I'm too cheap to buy Photoshop CS3 and unwilling to install a cracked copy.
